It takes about 20 minutes, needs one pan and keeps you full until breakfast.

Total:

Serves:
2 salads

Ingredients

  • 2 chicken breasts (about 12 oz / 340 g)
  • 1 tbsp olive oil for cooking
  • 1/2 tsp garlic powder, 1/2 tsp paprika, salt and pepper
  • 4 big handfuls mixed greens or romaine
  • 1 ripe avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, sliced
  • 1/4 small red onion, thinly sliced
  • 2 tbsp pumpkin seeds or sliced almonds
  • Dressing - 3 tbsp extra-virgin olive oil, juice of 1 lemon, 1 tsp Dijon mustard, 1 small garlic clove (grated), salt and pepper

Instructions

  1. 1Pat the chicken dry. If the breasts are thick, slice them in half horizontally so they cook evenly. Season with garlic powder, paprika, salt and pepper.
  2. 2Heat the olive oil in a pan over medium-high heat. Cook the chicken for 5–6 minutes per side until cooked through (165°F / 74°C inside). Let it rest for 5 minutes, then slice.
  3. 3Whisk the olive oil, lemon juice, mustard, garlic, salt and pepper into a dressing.
  4. 4Divide the greens between two plates or bowls. Add tomatoes, cucumber and red onion.
  5. 5Top with sliced chicken and avocado, sprinkle with seeds and drizzle with the dressing just before serving.

Why this salad works for a lighter dinner

Protein first. About 35–40 g of protein per serving helps the meal feel satisfying and supports muscle, which matters even more as we get older. More on that in our guide to protein habits for women over 40.

Healthy fats for staying power. Avocado, olive oil and seeds slow digestion, so you are less likely to go looking for snacks later in the evening.

Low in carbs, high in volume. Leafy greens, cucumber and tomatoes fill the bowl with very few calories, which is the idea behind the Lazy Plate Method.

Tips for juicy chicken every time

  • Even thickness. Slice thick breasts in half or pound them flat so the outside does not dry out before the middle is cooked.
  • Hot pan, no moving. Let the chicken sit undisturbed until it releases easily and has a golden crust.
  • Rest before slicing. Five minutes of rest keeps the juices inside.
  • Shortcut: use a store-bought rotisserie chicken (skin removed) on busy nights.

Easy variations

  • Mediterranean: add olives, feta and a few roasted peppers.
  • Cobb-style: add a boiled egg and a little crumbled bacon.
  • Southwest: season the chicken with cumin and chili, add a squeeze of lime and a spoon of salsa.
  • More fiber: add chickpeas or black beans if you are not strictly low-carb. For a plant-based bowl, try this fiber-rich Buddha bowl.

How to cook chicken for salads

Three easy methods, all ready in under 20 minutes:

  • Skillet: pound the breast to an even thickness, season and cook in a hot pan for 5 to 6 minutes per side.
  • Air fryer: 380°F (190°C) for 15 to 18 minutes, turning once.
  • Poached: simmer gently in salted water with a bay leaf for 12 to 15 minutes, then shred. Perfect for meal prep.

The chicken is done when it reaches 165°F (74°C) in the thickest part. Let it rest for a few minutes before slicing so the juices stay inside.

Meal prep: chicken avocado salad for 3 days

  1. Cook 3 chicken breasts at once and slice them when cool.
  2. Wash and dry the greens, then store them with a paper towel to absorb moisture.
  3. Chop cucumber and tomatoes and keep them separate from the greens.
  4. Shake the dressing in a jar.
  5. Add avocado and dressing just before eating.

Low-carb dressing ideas

  • Lemon olive oil: 3 tbsp olive oil, juice of 1 lemon, mustard, salt and pepper.
  • Creamy avocado: blend half an avocado with lime, Greek yogurt and cilantro.
  • Greek yogurt ranch: Greek yogurt, garlic, dill, chives and a splash of milk.

Store-bought dressings often contain added sugar, so check labels if you are counting carbs.

FAQ

Chicken Avocado Salad Questions

How many carbs are in this salad?

One salad has roughly 10–12 g of total carbs, most of it from vegetables and avocado, which also provide fiber. The exact number depends on your portion sizes.

Is this chicken avocado salad keto-friendly?

Yes, it is low in carbs and rich in protein and healthy fats. For a stricter keto version, skip the red onion and use fewer tomatoes.

Can I meal prep it?

Cook the chicken and mix the dressing up to 3 days ahead. Store greens and vegetables separately and slice the avocado just before eating so it stays green.

What can I use instead of chicken?

Grilled salmon, shrimp, hard-boiled eggs or baked tofu all work well and keep the salad high in protein.

Can I use rotisserie chicken for this salad?

Yes. Shredded rotisserie chicken makes this a 5-minute salad. Remove the skin if you want it leaner, and check the seasoning label for added sugar if you follow keto.

How long does chicken avocado salad last?

Without avocado and dressing, it keeps for 3 days in the fridge. Once avocado is added, eat it within a few hours, or toss the avocado with lemon juice to slow browning.

Prefer fish? Try this Mediterranean salmon and avocado salad for a low-carb lunch with omega-3s.

The bottom line

A good dinner salad needs three things: enough protein, some healthy fat and lots of crunch. This chicken and avocado salad checks all three boxes, comes together in about 20 minutes and is easy to change up all week.
