Some lunches leave you sleepy by 3 p.m. This one does the opposite. It is light but filling, with plenty of protein and healthy fats, and it tastes like lunch on a Greek terrace.

It takes about 20 minutes and works just as well packed in a container for work.

Why this Mediterranean lunch keeps you going

Protein from salmon and eggs. Together they bring around 35–40 g of protein per bowl, which helps the meal feel satisfying for hours.

Healthy fats. Salmon provides omega-3 fats, and avocado, olives and olive oil add monounsaturated fats. That combination is at the heart of the Mediterranean way of eating.

Low in carbs, high in volume. Leafy greens, tomatoes and cucumber fill the bowl, keep it fresh and add fiber without many calories. If afternoon cravings are your weak spot, this kind of lunch pairs well with the 3-color lunch formula.

Tips for perfect salmon

  • Dry skin, hot pan. Pat the fillets dry and wait until the oil shimmers before adding the salmon.
  • Don't move it. Let the skin crisp undisturbed. It releases from the pan when it is ready.
  • Pull it early. Salmon keeps cooking for a minute off the heat. Slightly translucent in the center is perfect.
  • No time? Use canned wild salmon or hot-smoked salmon.

Easy variations

  • Greek-style: add red onion and pepperoncini, swap greens for chopped romaine.
  • Higher fiber: add white beans or chickpeas.
  • Dairy-free: skip the feta and add a spoon of capers or pumpkin seeds.
  • Chicken version: swap the salmon for chicken, like in our low-carb chicken avocado salad.

How it fits into a weight-loss routine

You do not need to count every calorie to eat well. Fill half your bowl with vegetables, add a palm-sized portion of protein and a little healthy fat, and you are already close to the Lazy Plate Method.

Nutrition at a glance

Approximate values per bowl (recipe makes 2):

  • Calories: about 560 kcal
  • Protein: about 38 g from salmon and eggs
  • Net carbs: about 9 g
  • Omega-3 fats: salmon is one of the richest food sources of EPA and DHA

Why salmon is such a good lunch protein

Salmon gives you high-quality protein together with omega-3 fats, vitamin D and B vitamins. Health organizations generally recommend eating fatty fish about twice a week. A salmon salad at lunch is one of the easiest ways to get there, because it needs only 10 minutes in a pan or air fryer.

Wild salmon tends to be leaner with a stronger flavor; farmed salmon is milder and higher in fat. Both work well here.

Air fryer salmon (no pan needed)

  1. Pat the salmon dry and season with salt, pepper, oregano and a little olive oil.
  2. Air fry at 400°F (200°C) for 7 to 9 minutes, depending on thickness.
  3. The salmon is done when it flakes easily and the center is just opaque.

How to meal prep this salad

  • Cook the salmon and eggs ahead; both keep for 3 days in the fridge.
  • Store the lemon-oregano dressing in a small jar.
  • Keep greens, tomatoes and cucumber in a separate container lined with a paper towel.
  • Slice the avocado just before eating.

Cold salmon is delicious in a salad, so there is no need to reheat it.

Ingredient swaps

  • Canned salmon or tuna for a budget-friendly, no-cook version.
  • Shrimp for a lighter, quicker option.
  • Halloumi or chickpeas for a vegetarian bowl.
  • Romaine or spinach instead of mixed greens.
